Lazy Nails

So last week I was going to post my Easter nails. They were cute. Blue background with pink Easter eggs hiding behind stamped on grass.

And this is what happened with that. I had some issues. Got frustrated. Had to redo a couple. Gave up. Came back. Finished and wanted to be done with it. By the time I remembered to take the picture (2 work days later) I was chipping and repairing and that design just got past me.

So now this week. I am exhausted as I have been cooking, baking, laundering the last couple of days for Easter. I just wanted something simple and quick. Get it done and be done with it. That's what you see here.

Easter Dinner




I spent most of the day Saturday doing laundry and then dyeing eggs with the kids.

We used food coloring instead of the dye tablets or whatever you purchase in the store. They don't come out well in the picture, but I was actually impressed with the brightness of the colors. The only downfall was that as the water cools down (you use boiling water) you either have to give the eggs longer time in the dye or refresh with new boiling water.

The Deviled Eggs were delicious, unpleasant greenish hue aside. I used cream cheese in the mix and it added a smoothness that I really liked, so I think I will do them that way in the future.





These are Tomato Caprese Tartlets. Recipe from Melissa D'Arabian at foodnetwork.com. They are stuffed with a herbed cream cheese mixture, mozzarella cheese, a slice of roma tomato and drizzled with a sauce that was originally made of basalmic and olive oil but I can't stand basalmic so I used Red Wine Vinegar. Terrific recipe that I will make again. Everyone seemed to like them.




The main dish was these Cherry Stuffed Prosciutto Chicken Medalions. Chicken breast stuffed with dried cherries, bread crumbs, herbs and wrapped and rolled with prosciutto then baked and sliced and drizzled with red wine vinegar and oil. I was sure I had made way too much. Nope! The recipe is from Chef John, one of my favorites, at foodwishes.com.

















In the background of the second photo, you can see the Pink Lemonade Cake I made for dessert. I had hoped to have a better picture of the cake as well as a photo of the sweet potatoes but there was an unfortunate incident in the last few minutes of preparation.

For some reason, I grabbed the lid off the potatoes - without a potholder - about 5 seconds after it came out of the oven. I spent the entire meal with my hand in ice. I'm okay, I think I got the ice soon enough to avoid anything major aside from the pain. :/

And this was our beverage. Raspberry Lemonade. Served in these super cute glasses I have owned since 2009 and never used.
